A real meal

I'm trying to quit my snack addiction and learn to eat real food. By real food, I mean homemade goods, unprocessed goods, wholesome foods...you know, the food that would make organic farmers and PETA supporters proud. But why you ask when chewy chocolate cookies and cheesy Doritos are so convenient and on perpetual promotion at the grocery store? Why when I can eat a meal of instant noodles for 10 cents...10 cents?!?? Well....here are my reasons:

1) I was happier with myself when my mom made me eat real food and forbade sugary cereal, chips, and the like from entering the house (This did not suit my 8 year old mentality at the time but in hindsight I'm sure I was definitely happier and healthier)

2) Junk food makes my face swell up.

3) I'm trying to get back into the shape I was before I had embarked on the 6 month junk food marathon ( seriously everyday was like how can I possibly eat worst than I did yesterday)

4) I have more than 1,000 recipes that I've been dying to try but have not because I haven't eaten a real meal in I don't know how long.


I decided to make a pumpkin risotto with black beans. But I didn't follow the recipe exactly. I never do actually except when it comes to cooking meat...and there's a reason why but I'll disclose that in another post. There's no crazy story or anything but I figure it'll give me something to say on a day where I have nothing else to talk about. Anyhow, I used about 1 cup of arborio rice, 2 cups of broth, and 2-3 cups of water. I'm not a huge fan of salt so I would rather err on the side of bland then turn into rice swimming in sea water, which is why I didn't solely use broth. I also tossed in carrots an celery. I put in three heaping spoonfuls of pureed pumpkin. I've always thought of pumpkin as ingredients to a sweet dish which is why I was hesitant to put in more. And this is the result:
















This was taken after it had already cooled down. That, combined with my horrible photography skills, gives the photo that dull look. But I promise you it was good. Oh, I did add some seasoned salt to it. Don't say anything about the salt...I know... At least it was a very satisfying first meal.
